🍯🐟 Dijon-Crusted Cod


This Dijon-crusted cod is light, flaky, and full of flavor. A tangy Dijon mustard layer keeps the cod moist while a buttery breadcrumb crust bakes up golden and crisp. It’s an easy, elegant seafood dish that comes together quickly and works perfectly for a weeknight dinner for two.

🛒  Ingredients (For 2 People)

Cod

  • 2 cod fillets (6–7 oz each)
  • Salt & black pepper, to taste

Dijon Crust

  • 2 tbsp Dijon mustard
  • 2 tbsp melted butter
    • Dairy-free option: vegan butter
  • ½ cup breadcrumbs or panko
  • 1 tsp fresh thyme, finely chopped
    • or ½ tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • 1 tbsp fresh lemon juice

🔪  Preparation

  1. Preheat oven to 375°F (190°C).
  2. Pat cod fillets dry and place in a small baking dish or on a lined baking sheet.
  3. Season lightly with salt and pepper.

🔥  How to Cook

  1. In a small bowl, mix Dijon mustard with lemon juice.
  2. Spread the Dijon mixture evenly over the top of each cod fillet.
  3. In another bowl, combine breadcrumbs, melted butter, thyme, garlic powder, and smoked paprika.
  4. Gently press the breadcrumb mixture onto the mustard layer.
  5. Bake uncovered for 15–18 minutes, until cod flakes easily and crust is golden.
  6. For extra crispness, broil 1–2 minutes at the end (watch closely).

Cod is done when it flakes easily and reaches 145°F internally.

🧠 Tips

  • Cod cooks faster than salmon — keep an eye on it.
  • For a lighter version, reduce breadcrumbs to ⅓ cup.
  • Stone-ground Dijon adds great texture.
