🍅🐟 Bruschetta Tilapia


This bruschetta tilapia is light, fresh, and full of flavor. Mild, flaky tilapia is baked until tender, then topped with a bright tomato-basil bruschetta mixture. It’s a simple, Mediterranean-inspired dish that feels elegant but comes together fast.

🛒  Ingredients (For 2 People)

Tilapia

  • 2 tilapia fillets (about 6–7 oz each)
  • Salt & black pepper, to taste
  • 1 tbsp melted butter
    • Dairy-free option: vegan butter or olive oil
  • 1 tbsp lemon juice

Bruschetta Topping

  • 1 cup cherry or grape tomatoes, diced
  • 1 clove garlic, finely minced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp balsamic glaze (or balsamic vinegar reduced)
  • 1 tbsp olive oil
  • Salt & pepper, to taste

Optional Finish

  • Grated Parmesan
    • Dairy-free option: vegan Parmesan
  • Extra basil for garnish

🔪  Preparation

  1. Preheat oven to 375°F (190°C).
  2. Pat tilapia fillets dry and place in a small baking dish.
  3. Season lightly with salt and pepper.
  4. Drizzle with melted butter and lemon juice.

🔥  How to Cook

  1. Bake tilapia uncovered for 14–18 minutes, until opaque and flakes easily.
  2. While fish cooks, combine tomatoes, garlic, basil, olive oil, balsamic glaze, salt, and pepper in a bowl.
  3. Taste and adjust seasoning.

🍽️  Assemble

  1. Remove tilapia from oven.
  2. Spoon bruschetta mixture generously over each fillet.
  3. Finish with Parmesan (or vegan alternative) and extra basil if desired.
  4. Serve immediately.

🧠 Tips

  • Don’t overcook tilapia — it dries quickly.
  • For more depth, add a pinch of red pepper flakes to the bruschetta.
  • This works great with cod or halibut if you want a swap.
